Sri Lankan Kiri Bath Recipe
Ingredients

1 cup of Sri Lankan red or white rice
2 cups of water
1 cup of coconut milk
Salt to taste
Optional: pandan leaves for flavor
Instructions
Rinse the rice under cold water until the water runs clear to remove excess starch.
In a pot, combine the rinsed rice and water. If using pandan leaves, add them to the pot for added flavor.
Bring the mixture to a boil over medium heat, then reduce the heat to low, cover, and simmer until the rice is cooked and the water is absorbed (about 15-20 minutes).
Once the rice is cooked, remove it from heat and let it sit, covered, for about 5 minutes.
In a separate saucepan, heat the coconut milk and add salt to taste.
Fluff the rice with a fork and then mix in the warm coconut milk until well combined. Adjust the consistency to your liking by adding more coconut milk if necessary.
Transfer the Kiri Bath to a serving dish and shape it into a flat, even layer. You can use a plate or a bowl for shaping.
Let it cool slightly before cutting into squares or diamonds for serving.
Serving Suggestions
Serve with a side of spicy sambol (chili paste).
Accompany with fried eggs or fish for a complete meal.
Enjoy with jaggery or fresh fruit for a sweet treat.
Tips
For a richer flavor, use thick coconut milk.
Experiment with different types of rice for varying textures.
Enjoy your homemade Kiri Bath!
